GF berry breakfast muffins

Personally, I love a filling, protein and fibre filled muffin that fuels your body and tastes perfect with a cup of coffee. These muffins are just that. mostly healthy and great to sit down and enjoy a calm and grounding moment before the day begins. 

the recipe

dry

2 cups quick oats 

1.5 cups gluten free oat flour 

2 tsp baking powder

2 tsp cinnamon

a few dashes of all spice

wet

1/2 cup melted coconut oil 

2 eggs

1 tsp vanilla 

1/2 cup brown sugar 

1 cup siggis plain yogurt 

1/2 cup almond milk 

any berries you like and as many as you like!

the process

  1. Preheat oven to 350 degrees
  2. mix all dry ingredients together 
  3. whisk all wet ingredients together 
  4. fold the wet ingredients into the dry and gently combine
  5. mix in as many berries as you would like (I love lot’s)
  6. grease a muffin tray with coconut oil 
  7. bake for 25-35 minutes or until golden and a tooth pick comes out clean 
  8. enjoy!
