Classic banana bread

I mean… I don’t think I’ve ever met anyone who doesn’t like banana bread! this recipe is inspired from The Best of Bridge Banana Muffin recipe. I altered it slightly and of course, lowered the amount of sugar. Enjoy!

the recipe

1/2 cup good quality unsalted butter (room temp)

1/2 cup of sugar (even a little less)

2 brown eggs

1 cup mashed ripe bananas (2-3 bananas)

1 1/2 cups flour

1 tsp freshly grated nutmeg

a few dashes of all spice

1 tsp baking soda

2 tsp hot water

1 tsp vanilla

(feel free to add nuts or chocolate chips to taste!)

the process

  1. preheat oven to 350°F
  2. cream butter and sugar (beat for about 2-3 minutes).
  3. add eggs and bananas and combine.
  4. stir in flour and nutmeg
  5. add hot water, baking soda and vanilla. beat until well combined without over mixing.
  6. Line a bread tin with parchment paper. scoop dough into the tin.
  7. bake at 350 degrees for around 40 minutes or until golden brown and a tooth pick comes out clean.
  8. let sit for a few minutes before gently lifting the bread out with the parchment paper. place onto a cooling rack and enjoy!
